Ingredients:

1/2 cup raw, natural almond butter

1 cup pitted dates, chopped

1/4 tsp ground cinnamon

1/4 tsp ground nutmeg

1 cup rolled oats

1/4 cup unsweetened cocoa powder

2 tsp vanilla extract

Cooking instruction summary:

Place the oats in the bowl of a food processor and process until finely ground.Add dates, 2 Tbsp cocoa powder, almond butter, vanilla, nutmeg and cinnamon and process until finely ground and slightly sticking together (it will form a loose batter).Place remaining cocoa powder in a shallow bowl. Roll truffle mixture into balls (2 or 3 tsp per truffle), pressing firmly for mixture to stick together. Note: if you use 2 tsp per truffle, you will end up with 40 calories per truffle. Little Tommy was doing very badly in math. His parents had tried everything; tutors, flash cards, special learning centers, in short, everything they could think of. Finally in a last ditch effort, they took Tommy down and enrolled him in the local Catholic School. After the first day, little Tommy comes home with a very serious look on his face.
