1/4 cup olive oil (60 mL)

1 large Russet potato, peeled and diced

Freshly ground black pepper and salt

1 1/2 pounds of boneless, skinless chicken breasts

3 large sweet potatoes, peeled and diced

2 tablespoons Chilled unsalted butter
