2 large eggs

2/3 cup granulated sugar

4 tablespoons unsalted or salted butter, softened

1/3 cup unsweetened cocoa powder , I used Penzey's natural

1/2 teaspoon vanilla extract

1/2 cup toasted and chopped walnuts

You can use parchment or nonstick foil, but it might cause the cookies to spread a little more.With an electric mixer, beat the butter and sugar until light and fluffy. Little Tommy was doing very badly in math. His parents had tried everything; tutors, flash cards, special learning centers, in short, everything they could think of. Finally in a last ditch effort, they took Tommy down and enrolled him in the local Catholic School. After the first day, little Tommy comes home with a very serious look on his face.
