1 tsp baking soda

1-2 tbsp powdered cane sugar

1 1/4 c loosely packed grated carrots

1/2 tsp cinnamon

1/3 cup coconut oil, melted

1 c cooked quinoa

1/2 c organic dark brown sugar

2 eggs, lightly beaten

1/4 c kamut flour

1 can full fat coconut milk, refrigerated overnight

1/2 c Chobani pineapple greek yogurt

1/8 tsp ground ginger

1/8 tsp ground nutmeg

1/2 tsp salt

1/2 c spelt flour

1/4 c unsweetened coconut, toasted

1 tsp vanilla

1/2 tsp pure vanilla extract

1/2 c walnuts, chopped & toasted

3/4 c whole wheat pastry flour
