1 cup apple, peeled, seeded, diced small

1/4 tsp cinnamon

6 slices Udi's Cinnamon Raisin Bread, cut into cubes

3/4 cup egg substitute

3/4 cup unsweetened coconut Milk or non-fat milk

1 cup greek yogurt, plain, 0% Fat

1/4 tsp salt

1 packet stevia

2 packets stevia (for less sweetness only use one)

2 tsp. vanilla extract

If the top starts to brown, gently cover with with aluminium foil.Let the french toast cool for a few minutes and serve warm. Top with maple syrup if desired.
