1 bay leaf

1 pint of canned tomatoes

2 ribs of celery, chopped

1 quart of chicken broth

1 - 3 Tablespoons dried powdered red chimayo chili peppers

1 teaspoon cumin

Fresh cilantro leaves, to taste

2 - 4 cloves of garlic, peeled & chopped

3 Tablespoons pepper jelly

3 oz. light cream cheese

1 teaspoon olive oil

1 onion, peeled & chopped

1 teaspoon oregano

1 lb. lean pork roast, trimmed of fat & cut into 3/4 inch cubes (or 1/2 lb. pork roast + 1/2 lb. chopped cooked pork sausage)

1/2 teaspoon smoked paprika

3 cups cooked posole, drained (hominy)

Cook and stir for just a few minutes to sear the meat (till it's just lightly browned on the outside but still nice and pink on the inside), then pour the meat off into a bowl.
